I am a terrible procrastinator, especially when making travel plans. I give myself four or five days to drive somewhere and usually don't have a clue where I'm staying until I'm there. That night I'll see where I am, and look at maps to see what's up ahead. Traveling with a large dog is not nearly the headache it was just a few years ago so planning is much easier.

I think you are missing the point.
Like any military operation will tell you there needs to be a plan but expect things to go awry.
That doesn't mean chuck all planning and just wing it.
But if it works for you go for it.

Are you sure you are not missing opportunities by not flying the same Airline and using the same Car Rental company for all your travel?
I know you have to look at cost vs benefits but add in a branded CC and you might be missing some savings.
The major airlines can get you almost anywhere from LAS with 1 stop max.

so heres the thing. I would gladly do an unplanned trip if I had a bunch of money and extra time. I am guessing that your trip is basically I need to get there between x-x and your planning or lack of fits that.
I need to make plans to get free hotel and cheap flights or we couldnt manage to even come. I need to find the myvegas coupons and other bogo coupons to even have extra money for gambling. If I had 5k available for this trip then I would gladly have just booked the best flight and wouldnt think twice about the meals that I am going to have.
As was just mentioned if you planned better you could have some good car perks and possibly more free flights. For us low rollers that is a big deal. Maybe for you ballers, not so much.
Got here with time to spare and even check out a few Aladdin's.

The same airlines wasn't a good fit for me this trip. I haven't seen any savings using the same car rental companies. I'm sure there's probably other ways I could be saving money on flights and car rentals.

We dont get in until 10pm on friday so we are out for friday unless it was like a midnight one.

I just went to Escapology 2 weeks ago. It was fun. They are in Groupon, and it will only run you about $14 or so. Very worthwhile at that price. The full price was about $30-$35 or so.
