My wife doesn’t cook often, but she makes a great spinach/artichoke dip. So creamy, so cheesy, so ‘artichokey’! Since I eat it with a fork, not bread, it’s low carb for me.
I’ve also found these Oikos no sugar added Greek yogurts for breakfast.
Avoiding sugar/carbs tends to suck.

While in the grocery store, I saw these packages that you can put in your toaster to make grilled cheese sandwiches. You use your own bread and cheese, They showed a tomato slice on the it as well. I was tempted to buy it, but I don't usually eat grilled cheese sandwiches

Oven baked chicken legs with fried cabbage steaks. Not as good as a box of wholesome toaster grilled cheese sandwiches but good enough.

Woman in Texas just celebrated her 115th birthday. Her 70-year-old granddaughter says

"I never saw her go to a fast food restaurant much as like Chick-fil-A and all the places I like to go. She never did that. Whenever you went to her house, I don’t care what day of the week, she was cooking. So, I just think that had a lot to do with it."

I have never been one to care what my food looks like as long as it tastes as expected. I laugh at those expensive restaurants that worry about presentation.

Chanterelle mushrooms are coming up for foraging around here

fixing now rice, black beans, sliced tomatoes from the garden, and of course mushrooms .... sauteed in a mix of oil and cultured butter

might get too hungry to post that picture!

Rice, kimchi, sardines.

Unfortunately, my lifestyle is not conducive to making my own kimchi, so I purchase it. This batch of radish kimchi seems like it was not peeled correctly, so many of the pieces feel like they're wrapped in the woody core of a pineapple. This is odd, as this brand usually has pretty good quality.
The sliced cabbage kimchi is scorchingly hot, and generally excellent.
Smoked sardines in oil are a nice counterpoint, when I don't feel like frying up a spam. (This was discussed, but a few sardines from the jar were preferred to frying eggs and spam.)

Sated and going back to my day.

Today is Publix Hot&Spicy chicken wings. I bought a 50 piece and that should last me 10 meals or so. It freezes well and heats up perfect in the oven.
At my age, a "Life In Prison" sentence is not much of a deterrent.

It's not batter it's bread crumbs and it's that color because I use both turmeric and smoked paprika along with about five other ingredients. Turmeric is orange and smoked paprika is bright red.

Here's a bucket of KFC, how is this chicken a different color than my chicken. Looks identical to me. Why is it okay for KFC but not for me.

Pan fried salmon with blue cheese spinach. The trick to good salmon and it really is a trick, is to keep close tabs on the temperature of the fish. It has to be cooked to 145 and if you cook it too long it dries out and it's terrible. And it's really really easy to overcook so when it gets to 140 take it off the heat and it will keep cooking for another five or six minutes and will get above 145 on its own. I then put a whole pound of fresh spinach in the pan where the fish was and cooked it down and added a quarter cup of blue cheese crumbles and this is one of the best meals I've cooked in a while. It was absolutely perfect. The fish was moist and just right and the blue cheese spinach was terrific. No I did not eat all of this I ate half of it and will be even better tomorrow.

I had no intention of implying yours was bad. There is nothing wrong with a seasoned breadcrumb dredge.

As for comparing yours to KFC, the stripey bucket drive through chicken is more evenly colored. This is an expected difference; theirs goes into the fryer all one color ("mostly white") and comes out mostly one color ("mostly golden brown"), yours has some natural variation in color and texture from seasoned breadcrumbs getting unevenly toasted in the oven.

Cheetos crumbs are delicious, they're just no darn good for me.

My wife is going out of town for 18 days. It will be seafood fest at my house this month (wife is allergic to shellfish so as long as I scrub down the kitchen well hopefully it wont kill her when she gets home).

So far what I have on the menu:

Garlic grilled shrimp
Seafood gumbo
Stone crab claws
Crawfish etouffee
King crab legs
Macadamia crusted scallops.

I’ve been eating raw pumpkin seeds as my go to snack recently. Wash them down with dark roast iced coffee with a touch of half and half.
Also love big cashews, roasted and lightly salted.

You don't know how it's been handled, you don't know how old the products are that go in it, you don't know what greasy hair pimple-faced kid cooked it and did he wash his hands after he handled his Johnson in the bathroom. You couldn't even pay me to eat it. Every time I see ads like those on TV I always think, do people actually order this crap. Thanks for clearing it up.

Chef Stacy Bareng's Hanger steak. It was prepared at her restaurant on Monday and delivered fresh this morning.
Grilled Asian hanger Steak, charred broccolini, and delicious black and white rice with purple crunchy stuff. It would run $25 or more at a steak house, but I'd consider it a bargain. It appeared to be a small portion, but two hours later, I'm full.

We had some serious networking issues at my office that didn't seem to be affecting the virtual workers, so I worked from home today, and instead of my usual work lunch (a cup of yogurt and a can of Coke Zero Sugar), I had a can of Chunky Chili Mac soup. For dinner, I had some microwaved leftover Chicken Cordon Blanc - let's see who remembers why I call it that:

I had a burger for lunch with Venuzulian Sweet Corn Sauce. It sounded terrible, but I was assured I'd love it. They were correct.
It's made from corn kernels, mayonnaise, mustard, and honey, with black pepper and salt added depending on taste. I'm really sorry I missed out all these years. People put in on hot dogs, burgers, steaks, shrimp and you can even get a cup of sauce with potato sticks that you eat with a spoon.

I had a delicious lasagna for lunch. I love lasagna and this was one of the best I've had. A great ratio of cheese to meat, with fresh pasta, and basil that sets it off. It is better than any of the takeout places around here. A half a salad and this would make a great dinner
I froze two and will see how they cook when thawed. If you order a dozen meals at a time, you save a nice chunk of change. Four meals are $13.50 each, but a dozen is under $11.

Never been a dumpster diver. There are dumpster diving clubs all over the United States made up mostly of Housewives who go on specific evenings to their local grocery stores and dumpster dive for expired bakery items, grocery items and whatever they can get that is salvageable. Large grocery chains throw away a ton of good food with expired dates and if you know the right time to go to these stores these people do very well. Not my thing..

Never been a dumpster diver. There are dumpster diving clubs all over the United States made up mostly of Housewives who go on specific evenings to their local grocery stores and dumpster dive for expired bakery items, grocery items and whatever they can get that is salvageable. Large grocery chains throw away a ton of good food with expired dates and if you know the right time to go to these stores these people do very well. Not my thing..

Oh I got it. I just love it when I veer off in another direction and the other person doesn't see what I'm doing. It's especially fun when you do it in person and they're insulting you and you act like you don't get it. Literally drives them crazy. LOL

Tonight's dinner was chicken parmesan with rigatoni ala vodka. Although I prefer veal, this was a delicious substitution. This serving was much bigger than the usual entrees, with two large breasts nicely breaded and seasoned, with a blend of fresh mozzarella and shredded parm. Twelve minutes at 350 degrees had the cheese bubbling and turning brown. Add a salad and some bread, and most people could get two meals out of this.
Even at the full price of $13 a meal, the quality and convenience are well worth it. I'll fill my freezer chest with them at 50% off if they freeze well.

You rich people eat well, I only had two tubes of string cheese.

At my age, a "Life In Prison" sentence is not much of a deterrent.
