Much better now that you fixed the glitch. You cropped out the trash bucket glued to the wall sideways though. I mean floor. I was VIP at Seneca Buffalo Creek and they wouldn't even comp me a shrimp cocktail. Dang indians...

Deli days at home are never too infrequent, but are twice a week once the homegrown tomatoes start coming in.

Pictured left to right are capocollo, pastrami, and mortadella, my current faves. Mortadella is kind of new to me, as I like to include in the sandwich something not so dominating as the rest, and often even used bologna. But now that I’ve discovered Mortadella, no more bologna, which has a preservative off-taste to it when you really get down to it. Mortadella does not have that.

Pastrami is of course the king of the show. It basically is a version of corned beef, but further cured in a method that allows it to be served as a cold cut. Ordinary corned beef is always cooked as far as I know.

Included for Bill is the Gulden’s, which he reminded me about, and I’m using a lot. There’s so many great mustards! The Lottie's adds a lot too

Looks great but replace that mustard with Maille Dijon mustard. The stuff is fantastic and it's rated the best Dijon in the world. I buy it by the gallon, weighs 9 lb costs $53 and it's way cheaper than buying it by the individual bottle. I use it everyday. I also have a jar that's half horseradish in half Dijon that I use too.

I think it depends on the state. In some states comped alcohol are not allowed.

I had lunch with a group at Little Anthony's Drive-In Diner. It's a 1950s-themed diner with servers who dress as 1950s movie characters, and the staff performs a musical number every half hour or so.
Some people claim it has the best burger in Tucson, and their patties are eight ounces. Their specialty is a triple burger with many slices of thick bacon, onions, and tomatoes, accompanied by a house sauce. It comes on a platter with coleslaw, onion rings, and a large serving of fries.
I settled for a single patty burger, and it was too much. I find that six ounces is the biggest patty that can blend into the roll without overpowering it. It was fun watching two of the group take on the challenge, even though neither came close.
My 8 0z cheeseburger, a serving of fries, and a 10-ounce draft beer was $11.99, and the diner gave our group comped coffee and cookies.

The indians in your 'neck of the woods' appreciate the opportunity to scalp you. So what is an appropriate gratuity for a free $30 lunch or $43 dinner? And why do indians charge tax? They are technically on indian land - not governed by the state of connecticut. The Seneca casinos in the Buffalo area are cheap scumbags - indian givers. They only comp decent if you buy in like $20K or more a year and become an 'advantage' (their highest tier) member. Speaking of cheap deli - try Ka-me chinese hot mustard. Ditch the olive loaf idea - bologna even with added veges or cheese is yuck. But cheap hot dogs are always a quick treat before staring at some cards in my opinion

11.99 sounds good especially with a beer. did you eat in the 101 degree heat in your car? And did ICE stop in to harass the musical performers doing la cucaracha and send them south? After a month of free meals in a detention center. A triple 8oz pattie sounds like too much. that may not have ever happened...

Bob - how long does 9lbs of mustard last you? I'm surprised to hear people buy mustard just cause they read somewhere that it is the best dijon in the world. A sucker indeed is born every minute. I guess I am not up on the latest in mustard addicts anonymous...

I use my air fryer much more often than my microwave. It was a bit of a learning curve, but it worked out well. I keep it on my screened-in porch to avoid heating up the kitchen.

Harrahs has fired all its servers. Gamblers scoop their own food and get drinks from coffee/soda-stations, however Harrahs keeps it's wonderful BBQ Chef, see screenshot

I've tipped per Google's guidelines

However, avoid extremes like 50%, as this is significantly higher than standard expectations for any dining experience and could be seen as excessive.

The 12% option also falls within a reasonable range for good service at a buffet. The key is to adjust based on the quality and quantity of the service you receive. "


As to the sales tax @ comp meals...

No sales tax is required to collect on comp meals, aka a casino's "gift" to its gambler

The sales Taxman don't charge tax on gift, such as a free- meal, or a free car from Dad to son.

I hate the fact that tips are expected to be based on the price of the meal, that makes no sense to me. Tip based on the service or services provided no matter the price. If the service is the same at Denny's as it is at Emeril's, tip the same. I understand where the concept started as higher end restaurants tend to have more service personnel. High end restaurants tend to have the Maitre'D, the sommelier, the server, the waterboy, the people such as salad and desert preparers that do their tableside service, etc. Obviously, the tip will be bigger for all of that than what you would give Alice at Mel's diner but it still should have nothing to do with the price.

At a buffet I probably only leave $3 per person on average.

You have to also consider diners hanging around a lot longer. Upscale diners often converse longer. This slows turnover. I'd also argue time figures more in preparation.

Back when I regularly held court at a local diner, they initially hassled our group about not letting them turn the table.
Once they realized we had visitors cycling in and out, we all kept ordering things, and tipped well, it was no longer a problem. We always got the awkward table in the undesirable corner, and they effectively got the easiest 14-top of the week, at a 6 seat table.

Another salmon cookout day. The aluminum boat works really good with salmon because the fish doesn't go on the actual grill so it doesn't stick. I watch it like a hawk and when it gets to 140°. I take it off the fire and let it sit for three or four minutes and it it'll go up to 145° because it continues to cook. The homemade Cajun seasoning is what makes this so good. Has about 10 ingredients in it. My wife tried in futility to lure another chipmunk with a peanut. No my wife does not dye her hair blonde. She used to have really dark brown hair but when she got older instead of turning gray it turned blonde. To say she is not unhappy about this would be an understatement.

I am putting an 8lb bone in turkey breast on the smoker today. I have never smoked turkey before so I am not sure about the intricacies.

Today is a travel day, so we started with breakfast at Mickey Ds. I had what I think was called a Sausage McGriddle, and it was surprisingly tasty. I can't say the same for their iced coffee, which failed to impress.

I don't eat McDonalds often but I have always loved the regular Egg McMuffin but lately I have been getting the bacon, egg, and cheese McGriddle which is awesome.

I smoked this turkey breast for about five hours with apple wood. For a first try it came out very well. I would rate it at an 8.5 out of 10. Note my beautiful pan. I learned that if you plan on buying your wife pots and pans for a gift you better get the expensive ones. Le Crouset. I knew if I bought her Walmart pans that I would be hit by them.

Had a nice breakfast in Pietown, NM.
Many years ago, a couple started selling pies out of their truck on Route 60 in New Mexico. It was roughly halfway between Ruidosa and the large radio antenna that attracts a good number of tourists. Sales justified them building a small cafe for people to eat their pies instead of just taking them away, and in a short time, they had more customers than they could handle. They bought a few old trailers and rented them ou to new employees, and soon the little pie business had fifty employees and added a gas station/convenience store. It had enough population that the US Post Office opened a satellite office and named it Pietown. The town has approximately 200 residents, almost all of whom work for the bakery or one of the five businesses that have spun off from it. Route 60 is one of the most picturesque roads in America and has become a popular riding destination. Some of the riders I talked to this morning were up at the Continental Divide and stopped in on their way to the Midwest.
GPS says it is roughly six hours from here to my home in Tucson, but it usually takes me at least ten as there is just so much to see along the way.
