I'm not the best at skinning and cleaning deer, having only started hunting a few years ago, but I am getting better. I find it interesting to take the animal that lived a few moments ago and transform it into meat for the table. That is why I am interested in learning to do more of the processing. It links me to my immediate past--we did this with cows, pigs, and chickens on my uncle's farm--and to our collective past, when it had to be done to live.
I am hoping my boss and the crew shoot the rest of the deer we need to harvest (one more "trophy" buck, six does, and some "cull" bucks) next weekend or I will need to go back to help finish up. The population control part of the process is important to our landowner, and to the overall health of the herd. The deer we see now are much nicer than what they saw just a few years back due to these measures.
For those who are used to huge whitetails weighing over 200 lbs, that is not what we have...most yield 25-25 pounds of meat.

You also want the ribs, if you don't tell the processor you won't get them; goes to the ground hamburger meat I guess, probably a lot is wasted. One of the best dinners I ever put together was the saddle with the ribs attached, that can be a lot to handle though.

I'm not sure what size deer you are getting, but these deer are so small that there is hardly any meat on the ribs. I have cleaned the ribs and gotten around a pound of meat...since then, we just keep the backstraps, tenderloins, a neck roast or two on bigger (still small) deer, and the four quarters.
I can't get my wife to eat venison, so steaks and roasts would be a waste. She will at least eat sausage products, so that is why the majority of meat goes in that direction...
