Cool link. I was surfing some Towne Van Zandt the other day, and for some reason wondered if you were a fan? This is a cute version, others available.

Wife is pissed at me. When we got together 20 years ago she wanted 3 kids. I said hell no, I want zero. I gave in and had 1, then a 2nd. Our 2nd is turned 2 and she is wanting a 3rd. There is no way in hell I want a 3rd. We found out today that a friend of ours is pregnant with her 3rd. Her other 2 were born in the same months as our 2 so thay has exacerbated her want for a 3rd. I am not backing down on this, I am willing to go the route of ace to prevent this.

The freezer is stocked with loads of venison in various forms--some in delicious summer sausage (both with jalapenos and cheese and without those extras), link sausage, breakfast (sage, salt, pepper) sausage, and several packages for my future attempts at processing my own venison into sausages of various types...plus lots and lots of tender backstrap (a cut that includes what would be ribeyes and strip steaks if it were beef).

I'm not the best at skinning and cleaning deer, having only started hunting a few years ago, but I am getting better. I find it interesting to take the animal that lived a few moments ago and transform it into meat for the table. That is why I am interested in learning to do more of the processing. It links me to my immediate past--we did this with cows, pigs, and chickens on my uncle's farm--and to our collective past, when it had to be done to live.

I am hoping my boss and the crew shoot the rest of the deer we need to harvest (one more "trophy" buck, six does, and some "cull" bucks) next weekend or I will need to go back to help finish up. The population control part of the process is important to our landowner, and to the overall health of the herd. The deer we see now are much nicer than what they saw just a few years back due to these measures.

For those who are used to huge whitetails weighing over 200 lbs, that is not what we have...most yield 25-25 pounds of meat.

When I turn over a deer to a processor, I find it is very important to let him know what you want. Personally, I would rather have roasts than steaks. If you want steaks, you can cut them yourself. But venison roasts are so good!

You also want the ribs, if you don't tell the processor you won't get them; goes to the ground hamburger meat I guess, probably a lot is wasted. One of the best dinners I ever put together was the saddle with the ribs attached, that can be a lot to handle though.

I'm not sure what size deer you are getting, but these deer are so small that there is hardly any meat on the ribs. I have cleaned the ribs and gotten around a pound of meat...since then, we just keep the backstraps, tenderloins, a neck roast or two on bigger (still small) deer, and the four quarters.

I can't get my wife to eat venison, so steaks and roasts would be a waste. She will at least eat sausage products, so that is why the majority of meat goes in that direction...
