Craps, hands down. It's got excitement, camaraderie, and the variance that can lead to big wins. It's easy to play - no complicated strategy to remember and you don't have to concentrate to keep track of the rolls. Assuming you stick to the best bets, it's got a low house advantage. You can make a huge bet on a whim and nobody assumes you are counting or colluding. Nobody can blame you for messing up their hand, even though you are playing perfect strategy. (Actually, there are a few people out there who blame everything but their own propensity for making ill-advised bets, but at the craps table they are easy to ignore.) On any roll of the dice there is at least one bet that can win.

Pai Gow Poker. The more relaxed pace is attractive. I've found that people that play this tend to be more laid back than at the other games I've tried. Also, my wife likes it and we have spent many enjoyable hours relaxing at these tables. We play good strategy, but will admit that we both enjoy the Fortune bet (we know its a sucker bet).

Craps - Excitement, camaraderie, and variance. And ya can't beat the excitement generated when the shooter hit the point.

Poker - True gambling. You don't always need the winning hand to win. It gets my juices flowing, even when I'm not in the hand.

Pai Gow - (Shifting from poker to tiles) - Nice slow pace with low variance. Lots of hands that push.

Craps, Spanish21 (with redouble of course), and Ultimate Texas Hold’em are my favorites. Pai Gow Poker, 3 and 4 card poker, and blackjack are the other games I play.

I'm glad I didn't have to select just one to vote in this poll. ;)

I generally enjoy PGP, Slots, & VP. Although I want to try getting into craps next time I'm in vegas as well.

Blackjack just isn't that fun of a game to me, even though it's a classic. Not sure what it is about that game that turns me off.

My favorite is Pai Gow (Poker or Tiles) - especially for the slow pace when I get killed at the other games.

Spanish 21 - S17 and redoubling in AC!

Blackjack is always a favorite of mine, but it only treats me well once in a while.

Craps is a lot of fun for the reasons others have mentioned. Not so much fun to deal...or rather, to deal with some of the people (not all) who play it...but that's another story.

I used to enjoy blackjack but now find it rather boring, at least in plain-vanilla form. I do like some of the BJ variants that aren't total sucker bets, though (Switch, Spanish 21).

I tried Ultimate Texas Hold 'em last time I was in AC and really enjoyed it. If you follow the strategy over at discountgambling.net and raise when you're supposed to, you can do very well. Most people play much more conservatively than the proper strategy, but unlike blackjack they won't get upset when you do, which is another plus.

Video poker is horribly boring IMHO, and slots are a waste of money that I mostly avoid unless I get a free play offer.

Craps, Ultimate Texas Hold'Em, and Blackjack are my favorites. I love craps when the table if fairly full and will always hit it first (mainly because the casino I go to-Boot Hill in Kansas-closes the Craps table the earliest of any of the tables, usually around 12:00-1:00 am except on weekends if it's really busy), and then go to either Ultimate or blackjack.

Blackjack: One of few if only games where you can add to your bet when the odds favor you, low house edge.

Poker: No house edge, good fun a the table, moves slow enough you can enjoy yourself, and nothing like watching a guy who lectures you on how to play lose $1,400 in an hour at a $1/2 table, then ask to change tables for better luck. (Yes, this happened.)

Craps: A good roll and you can win big. Everyone is having fun together. You can set and throw the dice a different way and believe you tried to help yourself. Only game where you can mess with the dealers and they can (a little) mess with you back and everyone understands that is part of the game.

Craps is becoming one of my favorite games within a casino. I used to be strictly a card game guy, but my friend had introduced me to craps and i havnt stopped playing since. Otherwise I happen to be a big fan of four card poker.

Obviously, my absolute favorite game is Money$uit 31. Shocker im sure!

Video poker. You can do it at whatever pace you like without bother, and you don't have to put up with all the loud-mouth clowns at tables who without concern for themselves or others, smoke to look cool & carry a stench, and then drink themselves into ridiculous stupors.
