Can anyone give me the odds of getting a 5-card charlie on Spanish 21? 6-card Charile? 7+ card Charlie?

Yes, Katarina Walker gives that info in The Pro's Guide to Spanish 21 on page 55.

Also, here are my estimates based on the Wizard of Odds S17 Spanish 21 basic strategy:
5 card 21: 1 in 338 hands
6 card 21: 1 in 2,290 hands
7+ card 21: 1 in 13,200 hands
