What is the average amount of time it takes for a dealer to (hand) shuffle an eight deck shoe for baccarat (big table baccarat)?

Depends on the casino. There are very few original Big Bac Tables left. Most are all midi or mini 5 to 8 seats (now down to 3 or 4 with covid19) rather than the original 14 seats.
Shuffling would be the exact same with that or midi bac. Some casinos would opt to use an auto shuffler actually.
Some casinos might also still perform an additional cut and quick shuffle after removal from the auto shuffler at the request of players.
But to remove used cards, bag them, label, sign the bag, unwrapped new cards, shuffle and set up, about 15 mins.
