I don't know about their video poker.
For BJ, they use the CSM. Does this rule out all possibilities of any AP?

Probably most of the people playing are aps since most are playing with other people's money but getting Comps I assume they keep for themselves.

Does the dealer take a hole card? If so, you could potentially see its value before acting on your cards.

Yes.
But the Venetian BJ HA is only 0.15%. Practically a break-even game. You are paying for their lighting and maybe some staff. Unlike others who contribute M$.
Don't expect to get any Comps though unless they classify you as a premium mass market player.
