can anyone explain to me how CURRENT player tracking works with or without player cards and what it tracks?

Local casino stopped requiring masks for the vaccinated and stopped checking ID's & temperatures at the door a few months ago.
Omicron could bring masking & door ID & temperature checking back.
The door keepers keep a running count of the population of players in the casino. Somebody leaves or enters, they adjust the count on their networked computer. My local casino usually has 300-600 people inside, but if there's a promo drawing on a Friday night, I saw the counter at 2,000 people and the place seemed unsafely full during a local COVID uptick. If I'm there during 3AM - 6AM on a weekend, the place empties out to under 100 slot players, tables are closed at those hours.

it tracks coin-in, coin-out, bills-in, jackpots tied to the player if their card is in. it also reports all meters on the machine whether carded or not. it will also track which games you played on a machine and the associated percentage.
At my age, a "Life In Prison" sentence is not much of a deterrent.

You spend hours/days digging into obscure patents, but can't figure out what a casino keeps track of when a customer plays?
