My guess: quite a few.

Not I. :) I officially ended my year as far as 'work' (blackjack) earlier today. I generally take the week between Christmas and New Years off to avoid crowded conditions at the blackjack tables and just relax a bit before starting the new year. I still will visit a casino most days for a meal or two (not Christmas Day though) and my partner still has some machine play free play to play through.

My observations from my 6 years in Vegas:
Christmas Eve, a lot of Asians play and stay in the casinos. You will also see some people arrive that are celebrating Christmas, checking in with not only luggage, but bags of gifts. Some even with small children. What a wonderful Christmas that must be for small children....NOT!
Christmas Day, as ZCore13 mentioned many people head out to the casino after opening gifts in the morning. Hey, they have Christmas cash to blow. :) By mid afternoon, the California crowd arrives.
Day after Christmas, all the out-of-towners begin arriving and it will be crowded right through New Years. You see an awful lot of people from the Midwest, sporting Green Bay packer, Wisconsin Badger, Ohio State, Chicago Cub and Bear shirts, jackets and caps, spending at least part of Christmas week in Vegas to escape 'winter'. You will also spot many Pittsburgh Steeler, New England Patriot and Boston Red Sox logos. Strangely, you don'ts see too many New Yorkers. ?? Vegas over Christmas must not be a New York thing.
In return, I never had a problem taking off for the Jewish holidays.
I wouldn't go to a casino for Christmas only because I don't want to create demand for workers there -- I'd rather see as many of them get the day off.
And I never go to a casino for the Jewish High Holy Days -- because if I do I am doomed to lose and burn in a fiery hell at the craps table and never get a winning hand at video poker and lose all my Reward Credits in a computer meltdown and probably get a flat tire on the way home for punishment.
Here in the UK casinos are not allowed to open Christmas Day, so they will close at midnight and mostly re-open on Boxing Day afternoon. Also horse racing has a few days' break until Boxing Day.
Boxing Day is also a big day of sports, so I'll be heading for St Mary's (Southampton FC) in the evening where they play Arsenal.

What you mean is, the people who get money as presents run to the casino to blow it.

The Bellagio and the Venetian/Palazzo well actually more on the Venetian side decks out for Christmas. The majority of the casinos on the Strip are very minimal especially the MGM establishments. Wynncore doesn't really need to do anything.
If you like to gamble alone Christmas week and the week before are great times since it is pretty quiet. I did it last year. The staff is there because the majority wants to be there from my take of things. There are those who do grumble a bit since it is a part of their regular shift. Because it is more calm relative come January with all the conventions things are more laid back the last three weeks of December.

Why can't I get the vision out of my head of somebody in a Vegas hotel room opening a present, seeing a large box, opening it, and finding...a lot of packing peanuts and a betting slip for the losing team in the Raiders-Chargers Christmas Eve game?
On a totally related note, how much business do pawn shops do on the 24th/25th/26th?
Quote: DJTeddyBearI, my brother, his friend and the 3 wives, have been going together to a casino for Xmas for about 20 years now.

Confucius say: "Many man swallow, but fu man chu."
So I was in Harrah's AC when I took note of the return of non-Xmas music. 9:02am on 12/26. First song: Safety Dance.
