200 average bet in pai gow tiles
Able to bank evey other hand
Assume 30 hands an hour
If I'm correct

2 hours played gets 500 matchplay
Is there an edge in this?
The bet will not be paid- not now not ever

Hard to see how there wouldn't be an edge. $200/hand * 30 hands/hour * 1% average HE/hand * 2 hours = $120 expected loss. The value of $500 in match play is much more than $120. This math is easy. Pay Ayecarumba.

If you don't bank, I believe the H.E. is closer to 1.6-2%, almost 2.5% if you use the house way without banking. Match play is worth about $236 give or take depending on the game, in which case you're around break even/barely plus EV. You would have to bank in this case, which would increase total action/volatility quite a bit but the total HE is close to eliminated. Another angle would be to try to slow the game down, 20 hands an hour seems reasonable without being too flagrant about it.

+EV? At least marginally with the correct strategy and slowing the game a bit. Worth it? Meh, up to you, maybe there's other benefits down the line to factor in.

Edit: My thinking on the banking was a bit backwards as you would have an edge on those hands. If you can bank it's probably above 200 in EV.
