It’s really stupid to play Spanish 21 without playing the Match-the-Dealer side bet. That’s the only advantage play route for this game.

So what ratio should the Match bet be compared to the regular bet? 1/6? 1/3? 1/2? 1/1? 1.5/1? 2/1? The top payout doesn't come around that often.
I can see people playing $25 on the regular bet and $10 on the Match bet. I don't think I'd bother unless I was at the $60 level and bet $5 on the Match where a 12:1 payout was $60. Match bets really mess up the math of what I'm trying to do at the table so I don't bother with it.
The guy in this video was not familiar with Spanish 21 basic strategy, so basing his premise on whether the game was a ripoff and not playing proper strategy was a blatant mistake. His betting patterns were awful but interesting. I mean he did get from $1500 to over $8K, but he lost it back when he was far ahead.

These guys are well built, not only physically but also mentally. The ratio to bet on the side and main bets depends on the count, varying from 0 to 100%. Even 0 to 1000% sometimes.

It depends. If you have a good Sp21 game (S17, or redouble) most of your advantage is on the main bet. You can get EV out of the MTD as well, especially if you use multiparameter counts. There can be also bonus wheels and other things going on at a Sp21 table that add extra dimensions.
