If you could see all hole cards in all games, which do you think would be the most profitable? However, to make this interesting, if you make suspicious decisions, (i.e. hitting on 19 against what you know is a dealer 20) you get thrown out.

I voted for let it ride. The edge on the game is not shocking, and I believe that apart from the royal flush, you are unlikely to have all three bets in play for a lot of the premium hands, say a flush, 2C 6C 9C, standard strategy says you pull one bet back til you hit the fourth club, then you let it ride. I think there is massive value in being able to let it ride all the way, and the move would not look too suspicious. Even letting it ride on a pair of two's because you can see the set coming, would just make you look like a novice.

I think it would be impossible to cover your tracks in Blackjack. There have been cases of collusion (one involving a casino executive) where they showed the hole card. The duo got busted fairly quick.
The inherent nature of Poker where you might play bluffs would make it much easier to earn big money without getting caught. Plus without knowing the other player's cards you would still be lose some big hands.
The online poker cheat involved a guy who knew not only the hole cards, but what was in each player's hands. He also made no attempt at camaflouge.

If the choice was up there, I'd say poker. Because of bluffing, it would be very hard to determine that a "bad play" due to hole carding wan't a bluff.
In poker, hole cards ARE what's in the player's hand.

Um....
In poker, hole cards ARE what's in the player's hand.
This was of course the monster cheat that was Russ Hamilton, former employee of Ultimate Bet and Absolute Poker. The Wiz himself has made many comments on the case, and has seen the hand logs.

FYI: The flop, turn and river, collectively, are called the board.
Televised games use Hole-Card cameras.
"Hole Cards" means the opponent's hidden cards. This could be all the other player's cards at a poker table, or the dealer's cards at a table game.

It would have to be a game where you could make significant wagers after the distribution of the cards. No Limit Poker is the best choice as other table games require you to make wagers prior to the cards being dealt, then limit the amount of action to multiples of the original wager.
