The Nevada Gaming Commission has approved sports books to accept bets on the Olympics. (I say "again?" in the header as I know they were legal in Reno in 1984, so I assume they were legal in Vegas at that time as well.) William Hill has already posted some bets:

Yes/No props:

Will USA win at least 7 more gold medals than China? (Yes or No, both -110)
(They may need to clarify this - for example, if two USA athletes tie for the gold medai in, say, the men's 50m freestyle swimming event, does this count as two USA golds?)

Will Usain Bolt win the men's 100m gold? (Yes -200, No +175 - no action if Bolt withdraws before his first heat)
(What I want to know is, what happens if, say, someone else wins but Bolt finishes second, but the winner then tests positive for a dug test (a) a few days later (like Ben Johnson did), or (b) years later (I think the current "statute of limitations" is eight years - the men's shot put winner in 2004 was disqualified when his 2004 sample tested positive in 2011 or 2012, and the silver medalist was officially moved up to gold)?)

Will USA win the men's basketball gold? (Yes -320, No +260 - as the defending world champions, USA has already qualified)
I would give semi-serious thought to taking the No on this one.

Will Brazil win the men's soccer gold? (Yes +250, No -300)
Another 'dog worth looking into - remember, only three professional players older than 22 per team are allowed, and you never count the host country out if they have any idea what they're doing soccerwise.

Will USA win the women's soccer gold? (Yes +250, No -300)
Huh? Those odds might change after this year's World Cup, so if you back Team USA, strike early.
