I've seen this happen several times, and I don't understand it. I usually make a pass line bet and a single come bet with odds. If the come bet wins, the dealer brings it down with the winnings, sometimes leaving ten coming if they know I always have one come bet. But a few times I'm paid the winnings but the dealer leaves the bet with odds on the 8 or whatever number it was. This would make sense if I had another come bet up, but I don't. I have to ask them to bring it down. Is this a mistake on the part of the dealer, or some rule I'm unfamiliar with?

WinCraps doesn't give me that option. I'd have to convert my Come Bet with odds bet into a Place Bet or a Buy Bet.
If I have a $10 Come Bet and $20 odds up, I'd make a $30 Place Bet/Buy Bet on the same number when the Come Bet won.
Leaving the Come Bet with odds up may seem to be a better deal than making a Place Bet/Buy Bet.
I'd lose out on the Come-out Come Bet 7's which may be the reason the casino allows this action you describe.
Say I have $10 with $20 odds on the 4 or 10: it pays $10 + $40 = $50, where a $31 Buy Bet would pay $60/$59.
Say I have $10 with $20 odds on the 5 or 9: it pays $10 + $30 = $40, where a $30 Place Bet would pay $42 (considering I might need a $50 minimum Buy Bet)
Say I have $10 with $20 odds on the 6 or 8: it pays $10 + $24 = $34, where a $30 Place Bet pays $35.
Maybe taking the Place Bet instead of leaving the Come Bet with odds up is a better deal, depends what you're betting.

I’ve never seen this before. Sounds like the dealer is converting your come bet into a put bet. That has a higher HE than a come bet (because it skips the come out roll) and unless the odds are very high it has a higher HE than a place/buy bet.
The race is not always to the swift, nor the battle to the strong; but that is the way to bet.

So I guess if you're betting 5X odds or more, this Put Bet option would be a way to go.

As a substitute to placing the inside numbers, yes. I think 4x is the break even on 5/9 and 5x on 6/8. It’s higher against the 4/10 because you compare to the buy (and if you pkay those you should be at a place where vig is on win only if you can). But it is never better than a come bet if that’s what you want to replace.
