I'm interested in learning how to count cards, but admittedly I am lazy. About how long does it take one to get competent enough to count up a live blackjack game in a casino setting?

Also, can anyone recommend a simple counting system? (I'm not trying to squeeze out the most edge, just get SOME edge.) I've heard the Knockout system is a good one.

There are some quick and dirty systems for the lazy ... "Speed Count" comes to mind. Also the "Ace/5" system is easy. KO is a full step up from either of those.

Shameless promotion for weak counting system... poster non-affiliated

You will not make any money with these easy systems, except by good fortune.

Learning how to count is not that difficult. It just takes some time and practice and concentration once you get to the casino.
