I know that Texas Holdem is a 5 card game, but I would like to know the odds and math of hitting a 6 card and a 7 card straight flush.

I would like to know the odds of hitting 6 card with both hole cards playing and with one hole card playing.

7 card straight flush would be with both hole cards.

At least for the 7 card straight flush the answer is simple.
From 52 cards available, you need 7 cards from 7 draws. There are combin(52,7) of such draws.
In all those draws, there are exactly 4*8 straight flushes with 7 cards (A-7 to 8-A).
Hence probability of a 7-card straight flush is 32/combin(52,7) = 2.39 * 10^-7.

All other scenarios are a little bit different, but can be computed the same way.
