What are the chances that the Player and Dealer have an Ace-High Pai Gow hand. I'm guessing about 1 in 125 (0.008)

In my experience, it happens much more often than that, especially with the Joker in the game, though "Player" in my guess is a huge variable, as I'm thinking about how often I see it, whether it's my particular hand or not. I'm guessing 1 in 30 or so. But don't have the math skills to tell you exactly.
If the House lost every hand, they wouldn't deal the game.

I do know from the appendicies at WoO for the side-bets that the Player chance of an Ace-High Pai Gow hand is

The Dealer Probability would be based on 46 cards.
The chance of any Player Pai Gow (9-hi to A-hi) is about 1 in 6.22
