When you receive the income you take a selfie of you and the person exchanging the money ... no but seriously receipts and only dealing with reputable businesses.
I've also heard of just writing it down in a log bookand hoping the irs accepts the logs as true
One reason why poker and slot streamers record themselves is because they are usually doing it to prove their income... that might be the answer you were looking for.

I think cashiers checks from the casino deposited into your bank is about it. Take a picture of or scan the check. Keep your bank statements. Say I win $50,000 on a BJ heater, I'll ask for a cashiers check instead of cash and put it in the bank. Then do it again.
