Have not been a regular posting member though I've had an account on WoV for a bit. Hoping to get some helpful advice from the forum.
It's been going on about 10 years-ish since my last trip, and I imagine quite a lot has changed since my last visit. I'm staying at the Excalibur for half my trip and Rio for the other half.
My gambling preferences are:
3:2 Blackjack
Craps without super restrictive odds limits (Anything more restrictive than 3x/4x/5x odds)
Video Poker with decent pay tables
Sportsbook with comfy chairs to sit and bet on baseball all day
I know obviously that 6:5 blackjack has taken over (unfortunately) but is there a good place or places anyone can recommend that meet the criteria I listed above? Any general Vegas advice would certainly be appreciated as well.

I think South Point fits your needs, although I have not played there since Covid. Perhaps a downtown property, like the El Cortez.
The older I get, the better I recall things that never happened

Across from your stay at the Rio both Gold Coast and Palms have $10 3/2 BJ and 99% VP. Near your stay at Excal OYO (old hooters) usually has 1-2 3/2 $10, NYNY and Luxor generally have 1-2 $25 3/2 8 deck games (maybe Luxor only night/weekend), most of the MGM properties will vary from $25-100 by shift. Trop may have $25 3/2 double deck. Treasure Island on the north end of the strip probably has lowest min 3/2 games on the strip at either 10 or 15 iirc. Rule of thumb you won’t find 3/2 outside a HL, if it’s ever open, at any CET property other than Caesar’s at $50 and whatever Planet Hollywood is doing now.
Downtown all Stevens properties (D, Golden Gate, Circa) are all 3/2 except single deck, all have 8/5 bonus poker, plaza similar, El Co $10ish single or double deck Off the top of my head. I believe everywhere downtown other than Golden Nugget and maybe El Cortez has some amount of 99% VP games, vpfree2.com would be a better reference..

I stayed in Downtown Grand in Vegas 5/9-5/11 which is Tuesday through Thursday, I hope this advice is helpful.
If you do not mind higher table limits on the strip you can find some 3:2 Blackjack for $25 or $50. El Cortez had single and double deck for $10. Downtown Grand had $5 3:2 blackjack with a continuous shuffler throughout the entire day. Other place will probably be $10 or $15 if 3:2.
Downtown Grand had 10X odds, I think the El Cortez did also.
Most places downtown have decent pay tables, the only machine I played was Bonus Poker at Downtown Grand and if I remember correctly it was the full pay 8/5.
Circa has a humongous 78 million pixel screen that has multiple sports games going at once and the chairs are comfortable, it felt like sitting in a movie theater!
A general piece of advice is drink lots of water. Good luck!

Starting at I think 0.50 the bartops overlooking the sportsbook upstairs at Circa have 8/5 BP, fun place to waste a little time watching a game.
