Does the Baccaratt app on Wizard of odds reshuffle every hand or does it shuffle after 8 deck shoe, like in a real casino?

Clicking the "Stats" button tells you how many cards remain in the shoe (before the cut card), as well as an approximation of the remaining deck based on which cards have been seen.
Based on that, I suggest it deals out of the same shoe either until you decide to stop, or the cards are exhausted.
I am guessing the usual "baccarat burn" ritual is not followed, although I haven't reloaded the page enough times to have an authoritative answer.

Not sure what you mean? I am just asking questions. Most apps reshuffle after every hand. However, BJ has a really good app that that deals the whole shoe like in a casino. Just asking if this Baccarat app does the same

Open the web page. This loads the applet.
Click on the stats button.
This should display how many cards remain to be dealt before the shuffle.

Here is an example of what the Stats button displays:

Note it says "The cut card is 331 cards away", and if you add the numbers of each rank played, you get 69. That means the cut card is placed after card number 400 in the shoe: in fact, if you check the Stats before any cards are played, it says 400 cards away. From this limited sample, I would guess that the game simply cuts the last 16 cards consistently.
I played through an entire shoe. When I got down to 4 cards away, the next round used 5 cards. A pop-up then appeared saying "The next hand will be the last of the shoe", so as traditional, the game deals one more round after the cut card.
Also note in the picture that the house edge on Banker has fallen from its normal value of 1.0579% to only 0.9999%, so the game does change the House Edge values to account for what cards have been played.
