The Million Dollar View:
The brew pub at Four Queens makes an outstanding deep dish pizza but it takes forever.
I no longer dine at the Binions steakhouse, which used to be my favourite Vegas upscale dining.

Dining Downtown has changed alot over the years. Binion's Steakhouse is absolutely horrid compared to its Glory days. Adiamo's is good on a comp.

I walked into Caesars hungry and noticed Gordon Ramsay pub which was pretty empty
I sat down, looked at the menu and saw the same exact meal I was interested in at Hells Kitchen

I tried Eat for (carson street, downtown) brunch on saturday. Sat at the counters and had some beautiful pancakes with strawberries. It was excellent. People there were raving about everything else I. The menu. Portions are huge, service is quick and prices are decent.

I ate there 2 times which is saying something since I am such a cheapo. First time was almost free with the diamond dinner but the second time we paid. Sticky toffee pudding is about the best I have had. When we were in AC we ate the pub and each ordered one for dessert. I could not finish it all by myself because it is so sweet. It is perfect to share for me.

RIBEYES:
On the Strip I like the 20 oz. bone in ribeye at Delmonico (at the Venetian). It used to be even better, 45 day wet and dry aged (currently only dry aged), but medium rare it is one of the best steaks in town. Get the seafood tower and one bone in ribeye with creamed spinach it will stuff two and be almost enough for three.
Off the strip a place the locals like is Echo & Rig (in Tivoli Village) - it's also a butcher shop and you pick your own cut of meat.
SEAFOOD:
For seafood, expensive as hell, but at the Cosmopolitan, Milos lets you pick your own seafood, something like yellow snapper (Lithrini) ends up costing about a hundred dollars a pound once filleted, but is quite an experience. Be sure to get a Greek salad with vine ripened tomatoes.
None of these is downtown, but all are worth the drive.
BBQ? Not sure I'd go to Vegas to eat barbecue. We once went to this place in Vegas called M & M Soul Food, and as inviting as the name was, the food wasn't particularly good.
If the Tony Roma's that Robert DeNiro was blown up in front of in Casino were still open, maybe I'd go there...I actually did go there before it closed.
Not sure how long you will be in town for, however, if you have time, this is on me and the wife's to do list. She likes that show and Ramsey. Texas de Brazil is really good and its fun going with a group.
Mesa Grill at Caesars is very good. They serve some tasty Rabbit and the desserts are excellent.
Grand Lux cafe at The Venetian has really good food for a fair price, lots of nice variety on the menu along with a nice atmosphere, it's great for almost any occasion.

I live at Grand Lux during WSOP time, good salads.

walking away from a casino comp to pay for a meal takes a reason, for many it takes a good reason, for some it doesn't take much of a reason at all.
I sure do enjoy the exotic coffees and unusual but non-comped stuff even if its in a casino and only a few feet from the free stuff but its rarely the exotic names for the coffees or unusual menu items, it is usually, the companion or the "change" that is enjoyed.
its like a Room Service decision: Sometimes you just want to go out and find something else because even in Vegas, not all time and actions are gambling related. For those who live there or go there frequently, the casino's tether is shorter than for someone else. Uber, time, distance have differing values.

I can't eat at a buffet, in Vegas or anywhere else. I can't help but wonder who sneezed into the food or had thier grubby paws hand picking things before I got there. Also, think Chevy Chase in Vegas Vacation.

This is a common tactic in Disney World, too.
There'll be a fancy, popular restaurant that you need a reservation for months in advance, but right next door there'll be a lounge or a cafe where you can just walk in and order off of almost the exact same menu.
I've come to the conclusion that the Oyster Bar at Palace is the top dining destination for most visitors. It's very good, it's not expensive.
But the main thing is that the pan roast is a true Vegas dish. It was created here. You probably won't find it anywhere else. It might become one of your favorite dishes of all time.

Probably the worst restaurant on the strip. The food doesn't taste freshly made. It's like eating at Chilis. Going here with 100 outstanding places crammed into such a small area is a horrific mistake and a crime.
If you want heavy/greasy walk 1000 feet over to Yardbird. Southern food. Really good. Tastes like fresh ingredients, rather than something that was made a week ago and microwaved.

If you get up to Reno, try the pan roast at Silver Legacy. That is one of my favorite foods anywhere.

Beets are the worst of any "normal" food ever, it's natural ipecac to me. I dislike most all lettuces unless its iceberg. I avoid liver.

if you are solo or maybe have one other person with you. If you can find a seat in the bar, you can eat there. No reservations required. Also works for the buffets assuming they have a bar or counter. 99.9% of the people waiting at the buffet, whether they have paid or not, want to be seated at a table.
