More to the point, why are you looking for such I thing? I think half of the fun of a craps game is the social atmosphere and getting to actually throw the dice. Video craps would take all that away!
I have no idea whether video craps exits in Las Vegas somewhere I have not seen it. If you search to find the manufacturer, perhaps their web site would have info about installations.

I know in CA at Fantasy Springs Casino in Indio they have Shuffle Masters' Vegas Star Craps game.
It is actually fun to play since a shooter can virtually roll the dice. Still all computer controlled.

I have never observed those phenomena at the WoO/WoV craps games. I have played them a modest amount, and I play them more aggressively than I would play a real game with real money. I think the outcomes are quite similar to what I would have expected if I had played the same style for real. 90% right is fully sufficient. Just bet on "any 7" when you see it coming. You can quit your job and just make a living doing that.

Why turn off the bets? 90% makes it the surest bet in the casino. Bet the guts out of the 7 or at least go heavy on some don't numbers.

I went to this conference and took photos and videos of these products, but none of them have appeared in any casinos in Vegas that I am aware of yet.
Bill's has "Rapid Craps" and I have played it there. The dealers refer to it as "snail craps" and it is definitely anything but rapid. But you can play for lower denominations and for longer periods of time and get dollar drinks if that's your goal, it's probably the best craps game out there. It moves VERY slowly.
It is really hard to lean in to throw the dice because the screen gets in your way. But there are no chips to avoid when shooting, so some might argue it could be better for practicing dice control.
It is really difficult to code up a craps game compared to a slot game, or roulette. The G2E show had about 30 or so video roulette offerings, but only the three craps. And two of those were not very good.
Shuffle Master has made another iteration of Rapid Craps which has a big shared screen with satellite terminals instead of a dice table. When I tried it at G2E, it had a lot of software problems, so I doubt they are shipping yet.
