For a demo, I'd look at a digital photo frame. There may be a button on the back to change the image displayed.
Load a bunch of images... 1, 2, 3, 4, etc. Push the button to change the display.
Making 1 for a demo is a very different problem than making a hundred or a thousand for production and release.
Otherwise, for a demo, a flip-book would work, too.
It's funny how the simplest suggestions are often the best! =)

You don't want to have someone have to read the sign then punch in a higher number.
You wan't one person who can zero the sign and simply punch a button to add one.
