If the game is not random then how can you analyze it? Unless you know the algorithm that they are using I think you are out of luck.
But some tests to rule out some forms of predetermination would be to toss away a small winning dealt hams and see if you consistently get at least the same amount back. Obviously try that as cheaply as possible.
If the cards are random but weighted unequally, then that would be a lot harder to determine.
Here's another question. What do simple games like Jacks or Better look like in these places? What are the paytables for those?

This is what I am afraid of – some cards can be more probable to be dealt than others. Maybe I could get a good estimate of the fairness of the deck by playing a wild game and count the wild cards.

The games are quite different from those you have in the USA. One has to bet twice (on the deal and on the draw). This makes the pay table different. Straight for deuces wild is paid 3 for 1 compared to American 2 for 1.
