I've been the beneficiary of a number of dealer mistakes in my favor over the years. I like to think I've caught and corrected all of the dealer mistakes that have gone against me, but I have no way of knowing and likely have missed some. That got me thinking about which table games tend to have the most (and fewest) dealer mistakes (in either direction). I've compiled a list below based on my experiences. Obviously, this is skewed by the games I tend to play. There are a number of casino games I've never touched for various reasons (Pai Gow, Mississippi Stud, Caribbean Stud, UTH, among others). I'd be curious to hear other's thoughts. The below goes from FEWEST mistakes to MOST mistakes.

(1) Baccarat
(2) Pai Gow Poker (mistakes on copies)
(3) Roulette (taking winning bets)
(4) Blackjack (paying a push/loser)
(5) Any of the vaguely similar but different carnival games with complicated pay tables and multiple bets
(6) Craps (so many bets, so many chips, so many players)

*I've never played Casino War or watched a round actually played out so I haven't included it on the list above, but I assume/hope it's the game with the fewest dealer mistakes.
If anyone gives you 10,000 to 1 on anything, you take it. If John Mellencamp ever wins an Oscar, I am going to be a very rich dude.

Included in your number 5 is Ultimate Texas Holdem. It would be very rare for ANY dealer to go 8 hours without making an error. The player must make sure these errors are in his favor and not against him.

I don't know how this compares to the other games but Pai Gow Tiles is ripe for dealer errors.

I would put 4 Card Poker at the top of any dealer mistake list. The dealer misses their own flush in that game with regularity.
