Do any of the casinos let you play multiple hands instead of just one, should the space for the missing hand(s) be available? I read somewhere on the internet that in some, not all casinos it was permitted?

I've never seen a table where you couldn't play any available spots. In some casinos, they make you play some multiple of the table minimum, i.e., $10/hand at a $5 table, etc. That isn't usually the case, though.

I did this at the Borgata last month, and they had no problem with me playing table minimum on both hands. There were only 4 players at the table, so not all the spots were full.
