I don't know if this is the sort of thing you're looking for, but I enjoyed "Lay the favorite : a memoir of gambling" by Beth Raymer. It's a sort of memoir of her time working for a couple sports books.

So did I.
As for books, one that I enjoyed is Gambling on Goals by Graham Sharpe, which goes into some detail on the history/details/politics of soccer betting in England (although it doesn't cover "the pools" too much). Admittedly, it is slightly dated; the addendum is a rant about why all professional soccer matches in Great Britain were cancelled on the day of Diana's funeral.
