Here's a Texas Hold'em variant I came up with that I've been having fun with
Hold'em rules except for these differences: The deck is comprised of 27 cards, 3 suits 6-A. Players compete to make the best 4-card hand. The flop is only 2 cards, the turn no longer exists, and the river is 1 card as normal (2 streets). Hand ranking goes High card < Pair < Straight < Flush < Two Pair < Trips < Straight flush. [A 6 7 8] makes a straight.
Advantages: postflop equity is usually much closer with draws having less dead outs - closer equity usually results in bigger bets and therefore bigger pots which are more fun. Most preflop hands now have some postflop playability (ie. T6s in hold'em seldom makes 2 pair or better, T6s in new variant makes straights, flushes, and trips somewhat often). You can still deal 10 players in and adhere to casino procedures.
Math: 80,730 total 5-card combos out of 27 cards.
21,942 high cards (27.2%)
35,700 pairs (44.2%)
7,140 straights (8.8%)
6,480 flushes (8.0%)
6,804 two pairs (8.4%)
2,268 three-of-a-kinds (2.8%)
330 straight-flushes (0.4%)
Try this variant out some time with some friends. I doubt there's a market or even a way to copyright such a game which is why I'm sharing it with the world. Have fun!

Here's another based upon a full deck... "NUTMEG POKER"
Deal a 3-card pocket- 1 at a time to all Players, last card face up.
The first low card and Player to immediate left ante 1 unit,
The left-hand Ante is first to bet, and may raise.
Others in clockwise fashion call, raise, or fold- CHECK NOT ALLOWED (bet or fold)
The usual 3 raise then call or fold.
Burn 1 card and deal 2 cards to left-center as "TURN".
Open, call, raise, or fold. 3 raise then call/fold.
The TURN is 2 units to open/call.
Burn 1 card then deal 2 cards to right-center as "RIVER"
Open, call, raise, or fold. 3 raise then call/fold.
The RIVER is 5 units to open/call.
Then a showdown.
All Players MUST use 2 or 3 cars from pocket- using 1 not allowed.
Standard ranks of hands prevail.
Other betting ramps among manifold... 2/5/10, 5/10/20(25), etc
High/Low-8 also possible.
