You mean the physical dice? I have no idea how often they rotate them if that's the case. I'm guessing an experienced craps player knows this? I have never play craps for longer than an hour, seriously. I have played poker long enough to know decks typically change every 4 to 6 hours.
Also, if they switch them as frequently as they do in live poker, this really hurts "the game is rigged argument".

There's actually only one pair of dice in Vegas. Quantum effects and 'brane interactions make it seem like several hundred pairs at once :P
