OK, I have not played BJ at a real casino, so I can see I am in for plenty embarrassment for various newbie blunders. I was going by how they got no more cards! But I guess the dealer BJ was the end of the hands.
Believe it or not I have scanned that video to get a handle on hand signals, and just that sort of thing as shown.
PS: I thought to buy insurance, there was a place to put your money, and without that, no bet? So why is a hand signal needed?
You're right. There IS a specific place to put the insurance bet - right in the words that say "insurance pays 2:1". And some casinos will take no bet as indication of no intention to take the bet. That same wave signal is used to stand.
To hit, you knock the table, or finger tap it.
If it's a face-down game, hit are signaled by scraping the down cards towards you, stands are signaled by tucking the cards under the bet.
Splits are by making a '2' hand sign, to indicate two hands..
Double down is indicated by making a '1' for one more card.
Surrender is a hand to your neck as if you're cutting your head off.

To elaborate:
Split: The two fingers is correct. I prefer to touch the table with the tips of my fingers, as if to point to two different hands.
Double: Correct, one finger. I might add just doubling your bet implies you want to do one or the other. If you don't have a pair, it is obvious you want to double. It is with fours and fives only that you should need to specify if you're doubling or splitting. However, some dealer demand a hand signal for everything.
Surrender: This is the most sensitive signal. The correct gesture is to draw a line on the felt with your fingertip, behind your bet, about six inches long. However, it sometimes happens this is mistaken for a hit. I always say "surrender" as I'm doing it.
Thinking about it, I recall once seeing a guy do a karate chop to the table, as if to chop his bet in half.

That's smart to be noticing these things. I'll also give you credit for running things past the forum here as you have done, and would recommend you do that with the videos. It is a well known problem that those deeply involved with a project get too jaded to catch the errors. What happens at 8 minutes might just be trivia, but "gambing" instead of "gambling" is the sort of thing that should be caught. Of course all will be picked apart to pieces if you do the sneak peek here!
