Does introducing variations of BJ such as bringing in spanish, switch, or super fun and the big one 6:5 tables help a casino determain who might be or is a card counter by focusing thier attention to the players who seek out a 3:2 table? I know others will also consider the 3:2 tables - but if your a counter and looking ot make a profit youd never pay up a 3:2 and no I can focus my attention on less customers. Or is this a flawed look at it?

I think isolating card counters is a very distant concern to maximizing profits.
No matter what people say about camouflaging card counting, to be effective a card counter has to seek out a game with an inherently low house advantage, and he must bet at least $100,$200, $300 and $400 where the bets are changed in a precise manner. Alternatively a gambler has to show up periodically to make very large bets when a cohort signals him that the card count is very high.
I don't think casinos have any trouble looking for that behavior.

It's flawed. Spanish, Switch, and Superfun come in at really low house advantages (less than Blackjack) but it is seldom played properly because players fail to make the strategy changes required. 6-5 21 is aimed at low ball, low variance gamblers who trade off the additional 1.5% loss on the blackjacks for low table limits. It's popular among the unknowledgeable and those who want to play 21 but don't have much to spend. It also keeps the employees employed and the game seemingly popular for them.
Counters have nothing to do with it. There is plenty of surveillance to look for the behavior.
