Does the number of hands dealt to the players affect the house edge in Ultimate Hold'em? For example, we have a table that allows players to play 2 hands per seat. So, there are 12 hands dealt out to a full table. Will this affect the house edge?

Indirectly, it could, but in the same way that seeing a different player's cards could.
The UTH House Edge is derived from the assumption that you only know your own cards and whatever cards happen to be in the Community Hand. If you make composition-dependent decisions (correctly and when appropriate) based on other cards that are known to you, then your effective House Edge can be slightly reduced.
