I was placing bets at the casino, 6-number street bets (like 1-6) on the table and when I win these there were a few dealers who paid me 6:1, rather than 5:1; i dont know why this is the case i just never see anyone do these kind of street bets for the 4+ hours ive been at the tables. If this was in a double zero roulette table, what would the house edge become if i only used this type of bet with the dealer always paying me 6:1?

There is part of the problem right there!!
First Problem: Improper terminology for the bet you are making.
Second Problem: Lack of awareness of the one exception.

>there were a few dealers who paid me 6:1, rather than 5:1;
Most likely, the dealers were all paying you off correctly.

On-edit:

American Roulette Double Zero Wheel (the most common)

5......................Zero,Zero-Zero,1,2,3 ..........6.............7.89
6......................Line...................................5..............5.26
12....................Dozen................................2...............5.26
12....................Column .............................2...............5.26
18....................Odd or Even ......................1...............5.26

It would be 0.

No. Instead of zero I think it would be 7.89 percent house edge.

The problem I am having is that you seem to be confused as to whether you are making a Street Bet or a Line Bet.
You seem confused also as to the Bet that embraces "0, 0 - 0, 1, 2, 3" .

I think you were probably being properly paid off each and every time. The dealers were correct. Certainly this is the most likely scenario. Did these varying payouts happen at the same casino? For the exact same bets?

Actually, neither :)

6*6/38 - 32/38 = 4/38 - a 10% PLAYER edge.

eh my bad i think its called a line bet, where you bet anything from 1-6 or 4-9, etc. etc. and not that 0, 00, 1, 2, 3 bet :P

then i see that i receive 7x the stack of chips i placed including my original bet and sometimes receiving the proper 5:1 payout with most other dealers.
