Are there any okay Tex/Mex places on the strip, either stand alone or in the casinos? We're not looking for gourmet, just decent tacos, burritos, etc.

There is a mexican place in TI. It was a little fancy but not super high end but the food was fantastic IMO. Sorry I can not remember the name.
Expect the worst and you will never be disappointed.

Border Grille in Mandalay Bay was decent in my opinion - I've eaten there before. I also tried Dos Caminos in the Venetian, but thought it wasn't as good. I miss Garduno's - they had the best fajita's....

Is Diablo's a tourist trap or can you get anything decent from there?

Another vote for both Gonzalez y Gonzalez (NYNY) and that place in TI. GyG is very basic and inexpensive. TI is a bit more creative and upscale, but still comfortable.
I tried the place in Mandalay Bay which was just too artsy and expensive. Wouldn't recommend.

What exactly is "Tex/Mex" food anyway? Is that your basic Americanized Mexican food, like at El Torito?

We had some great taco salads etc. from a place part of the Monte Carlo structure, in between Harrah's and the Venetian. Don't know the name.

I don't know El Torito, but I can guess. Unadventurous. Tacos, burritos, fajitas. Onion, cumin, chile, garlic. Lettuce, tomato, cheese. That is what Mrs wants to know about. I know that a lot of people would say that using "decent" when describing that fare is an oxymoron, but there's room for it to be done right. Just because the flavors are broad doesn't mean they can't be done well.
We're going to be spending some serious cash at SW Steakhouse, and we're thinking about cheaper options that might be worth planning, rather than just happening to be at when hungry. Our first three nights are scripted, the 4th is worked around the 7PM show of Jersey Boys at Paris. If we could hit a quick bite down that way before or after that show, that would be good.

That's nowhere near Harrah's and The Venetian....
