They claim that the odds are the same as "real" craps. Just that California doesn't allow dice, so they have to use cards. Is that statement about the odds true? I think it should be but only if they reshuffle after every "throw" of the dice. Otherwise the "rolls" aren't independent.

It is basically the same. Depending on the set up (number of cards, frequency of shuffle), it is possible to have a player advantage due to non-replacement of the cards. Check out the WoO's Card Craps page for details.

Thanks! I was searching for something like that, but was searching for "hot water craps" so didn't find it.
