If they are committed to those 5 letters, then I would say ASTER may be a better choice after the previous day is an "S" word.

Now that I think of it, if "S" is excluded from position 1, then its chances of being in the word are sufficiently diminished that I would go for an initial guess a word with no "S" in it.

Good choices the day after a word starting with "S" and still containing TARE might be ALERT or ANTRE
