Am I completely overreacting? I understand people do it all the time, it's fun and all that good stuff. But it's dangerous, and the last thing in the world i want is for him to get hurt. Is it completely unreasonable for me to want him to stop doing actions like this?

The best thing you can do is to leave him.
Do you see any long term potential in this guy? He is headed for the ER or the Jail Cell or both. If he is completely stupid and doesn't think things through, he will never make much of an employee anywhere and so will always be poor. He is probably going to be out with his friends, not at home supporting kids or anything. I grew up on a lake and once it froze my friends and I would do this all winter long. Most of us had muscle cars and it was a lot of fun. I do not recommend this for the highway.
I'm assuming you are fairly young. If he gets caught, they'll throw the book at him.

Betting the Big 6 or Big 8 is obviously a bad idea, and in only one circumstance can it make any sense. You are getting less value for your bet rather than just Placing the 6 or 8. So, it is not unreasonable to be upset at him for betting Big 6. Personally, I'd find it a deal-breaking offense. Kick him to the curb.

This chick must have met her prior boyfriends at church socials, if this type of healthy, NORMAL young male activity alarms her.
