Here I set the AC at around 71 and it stays there: what about in LV?
My suspicion is it is too hot to keep it that cool, so the average temp is higher.
Your temp will be whatever you set your air-conditioning to, however it will cost you from 300 to 400 a month during the summer months. During the winter you pay like $50.-100 a month. TV says gas prices have been falling for 24 days in a row. Wake me up when it gets to every day for 7 months.

Summers are brutal here too. Currently we are in a heatwave and it's been about 27C ( 81F) demanding occasional use of the car AC

No Aircon in my home ( Homes don't have them here ) , just a gas central heating which is set to keep the temperature above 19.5C ( 67F)
It has barely needed to run since February. Currently, we are in a heatwave and the indoor temperature is a rather warm 24C ( 75F)
I would not swap your our climate for Vegas.

Back when I was in charge of the thermostats at the office, we had to keep the air between 68f and 76f. I think that's an OSHA rule for "moderate exertion" work. (It can get hotter, but you have to cycle people out of the hot area and allow very frequent cool-off breaks, particularly with higher exertion.)
The last time I was at an army base, I think they had a sign by the thermostat that said they were to cool the office to 75f.
I personally prefer about 64f, but the thermostat at the house is set to 69f-71f.

In Las Vegas our house had two separate A/C units (one for upstairs and one for downstairs). During the ridiculously hot stretches our AC would run 24/7 and struggled to get the house below 80 degrees. Our largest electric bills were in August and were around $700 and that was keeping the thermostat at 78 degrees.
In Florida we keep the thermostat at 75.

My wife has one in front of the family room TV. I hate it. I am always cold at 75 and the fan just makes it worse.
Expect roads to buckle.
