Yeah, I wanted to know what the lady said or did to get punched. Unless this a porn slapper who randomly slugs people for no reason. In such a case, I will certainly be on my guard if this is a new sales tactic.

If they had taken this to trial, would the victim have had to appear? If so, who foots the expenses? Suppose she didn't want to testify?

There was a similar fad a few years back where people were randomly knocking people out or tasing them. They non surprisingly called it "The Knock Out Game/The Tase Game" The fad kind of stopped when a guy with a Taser tried to Tase a guy(The Taser didn't work well or something) who had a concealed weapon and he shot him to death.
He was not jailed since he did it in self defense and his face was blacked out when he did an interview on the News to protect him, presumably from the killed guy's friends and family who would want revenge on him for killing their loved one. On an interesting twist, the guy who would have been rendered helpless had the Taser worked well was waiting for his 6 year old daughter to take her home after school. She would have seen him helpless on the ground.
