From what I have seen, it's ten almost-plate-sized and fairly thick pancakes, and it's $16.99 if you don't finish in 15 minutes - or if you use your hands, or anything else besides a fork (and I assume that's "a," as in "one," fork).
NYNY's America diner used to have an all-you-can-eat pancake special for about half that. (The current price for a normal stack is 8.95, and I don't see any reference to the special, although it never was on the menu.)

I concur! The best I've found in Vegas. And I'm not a small guy, 6' 2" 200 lbs and a short stack with bacon is enough for me. I can't see anyone finishing this with the terms they have listed. I want to see the video if they do!

That's tempting. Maybe 10 years ago. Definitely 20 years ago. But I'm too much of an old f*** now to even attempt those oversized pancakes.

They really are tasty. A touch of crispy on the outside, and fluffy on the inside. If you are at Du Par's, and not eating 10 pancakes, be sure to have the shrimp cocktail. I also recommend the steak and eggs. They serve prime grade steak with the steak and eggs, so be forewarned, this ain't the shoe leather you get in your grandpa's $1.99 Trucker's Special. On the other hand, it cost's way more than $1.99.
I note that the hot dog champs dip the buns in a cup of water. I know that must be better, but I am not sure why, since the liquid takes up volume and cannot be compressed.
Perhaps the best strategy is to "puree" the pancakes to get as much air out of them as possible, before "drinking" them.

The server did seem to explain that you couldn't grab them with your hands and dunk them, had to eat with utensils (fork).
Strategy should be either to take a lot of sips of water (time consuming) or to dip each forkload in a little water (risking a rule violation).
Extra liquid should actually aid the ingestion and digestion. Eating it dry sounds painful.

Ten pancakes isn't much, even if they are quite a bit bigger than the typical IHOP / Denny's. What's the incentive for doing more than one stack? Wouldn't take too much to get me there, just have to negotiate a date and time

Of course, the gluttons could start hording earlier than the seventh inning, but having a hot dog wrapped in five paper towels kept in your purse for over two innings would lose some of its appeal.
Ah yes, I'm sure you're right about that. That's exactly what they'd do.
