The 5-play nickels is the better deal, correct, because 4 out of every 5 hands will have the good holds from the initial hand?

Not sure where you got that from... If you get dealt garbage, then all five draws are garbage draws.
The overall return of multiline equals single line if you can find the same paytable. That's somewhat hard to find though as nickel games usually have lower paytables.

Assuming that the payables are the same, the EV is the same.
But the variance is much lower on 5-play. So, if you have an edge, play 5-play. But if you don't and are just trying to get lucky, play 1 line of quarters.
