I modified some paytables on common table games to have almost no house edge for playing at home where you might want equal opportunities. I personally have a clay set of poker chips and my friend and I play at 1/10 value (red chip = 50c instead of $5) or sometimes for fun, but the point is having something cheaper than a casino and neither of us having a long-term advantage.
Anyways, I was able to calculate this by using the math supplied by wizard of odds and other people way smarter than me. I tried to keep all the numbers "even" so that you aren't payed 364 to 1 on a royal flush. House edge of course based on perfect strategy. Expect my numbers to be off slightly (by 0.05% or less?) just because of my rounding and significant figures. Heres what I came up with:
Blackjack:
(0.26%) 6 decks with late surrender and all the other good rules. (+0.01%) for 1 deck H17 nLS
___Trilux/(21 + 3) side bet: (+0.01%) you need to make a 3 card poker hand with your 2 + the dealers upcard
Flush - 5 to 1
Straight - 10 to 1
3oaK - 30 to 1
SF - 50 to 1
RF - 250 to 1
3 aces of spades* - 1000 to 1
*I made this up to add 0.40% to the game
Ultimate Texas Holdem:
Divide by 4 for the Element of Risk

This game is very hard to play perfectly so I would consider 50 to 1 for quads or even making a pair of 5s a push. I have no idea what the math is for that push but I do know that modifying the pay on trips or worse changes the payback way too much

It would be simpler to just have the person who is the house rotate between the players. In BJ, the dealer rotates after every dealer BJ, etc.
Gambling is a math contest where the score is tracked in dollars. Try not to get a negative score.

Thats a solid option too but I like dealing more and my friend likes playing more. Especially if you are playing by yourself a little extra payback is nice. If I did switch I rather it be on a per time basis

Is it the position or the specific action that you/your friend prefer?
IE. Maybe you should always deal, but use a dealer button to determine who plays as the house.
