I just wrote up a new page on Sharp Shooter, which should not be confused with a similar game Six Shooter. In Sharp Shooter, there are only three dice to eliminate, but unlike Six Shooter, one player die can eliminate at most one Target dice. Bottom line is a house edge of 4.40%.
I think this game makes for a great homework assignment in combinatorial mathematics, if the Good Will Hunting problem wasn't enough for you.

I think your first, simple table is inverted or mislabeled. If your first roll catches 3 DICE, you're paid 8 to 1. But your table says 3 ROLLS pays 8 to 1. The table would make sense to me if you kept the headings but the first column had the numbers inverted. And then if it were titled, "Match the Dealer's Dice In..."
The probability table below that seems labeled correctly.
