I am new to Pai Gow poker. The tables have a digital screen that the dealer can see what hand each player has been dealt. My question, are the hands random, or preset by computer?

The shuffle IS random. The cards are scanned as they exit the shuffler.

The main purpose of the scanner is to verify that the dealer set the house hand correctly.

I have been keeping a close eye on the I-Deal unit.
the cards are not scanned as they exit. They exit in piles of 7.
They however enter into the shuffler 1 at a time and I believe they are
scanned as they are entering.
I also saw a comment from Paigow Dan about the usb cord.
I did see a usb cord attached to the rear end of the machine
which may indicate that the number generator is not random.
The casino I am referring to is Wild Horse pass in Arizona
and lately the jackpot has been floating over $500K

I'm pretty sure it does read the cards as it stacks them in the packets just prior to you seeing them, not just when it pulls them in.

The I-deal is not able to set hands in deal mode, or to set the dealer percentage by giving the dealer a particular hand through manipulation of the number to start with in PGP; this has been verified and validated more than a few times. It is able, when the key is turned to "sort" mode, to put the cards into suit/rank order. I had that question coming into this site last year, and it got answered to my satisfaction; while the machine is CAPABLE of being programmed to do such things, it is locked off from doing it through the software and motherboard chip protection, and tampering, if it has taken place, is evident to a technician/auditor.
If the House lost every hand, they wouldn't deal the game.
