In most major strip casinos, I have seen these games
Blackjack - SD, DD, 6D, CSM, Switch, Spanish. I never saw Double Exposure.
Craps - Regular. Major casinos didn't have fire bets.
Roulette - Regular, and European in HL area
Baccarat - Quite a few. Many of them were 'mini-baccarat', and I do remember seeing some EZ Baccarat (push at B7 win).
Pai gow Poker - A lot. Quite a few was fortune pai gow.
3 Card Poker - a few
Let It Ride - almost all casino had one or two tables.
Every casino had these seven games. And the other games were seen less frequently;
4 Card Poker - sometimes
Pai Gow Tiles- only in high-end casinos
Big Six Wheels - Saw in most casinos, although sometimes they were not played
Crazy 4 Poker - Saw them at MGM
Ultimate Texas Hold'em - Saw in some casinos, but not all
World Poker Tour x10 - Only saw it in one casino or two
Caribbean Stud - Saw it in a few casinos
Casino War - in most casinos, although not all
There might be some eclectic games played in the outlying areas, but I don't recall seeing any other table games in the Strip (which for me ends at Encore).

You missed crapless craps at the Stratosphere (also a few games downtown.)
Mississippi Stud at Paris (really big down south of course)
Rapid Craps at Bills
Rapid Roulette at several locations.

The NGC itemizes only 12 games (although I don't think of Keno and Bingo as table games). Of the itemized games only 3-CARD POKER, LET IT RIDE, and CARIBBEAN STUD are proprietary. The other games category is only 6%. With blackjack revenue dropping by 34% in a little over 2 years, then the casinos may want to reconsider having half their tables set up for blackjack.

Sorry I missed them.
For me, the strip ends at Encore. I consider whatever lies north of it as "South Downtown".
