Playing on a roulette table with one x zero.
If I bet on my lucky number 7 for 37 spins there is about a 35% chance number 7 will not come up. Is this true?

Correct. The calculation is 36/37, then raise that number to the 37th power. It is closer to 36.28%.

I bet if you asked most roulette players they would say about 5 or 10%.

Yep. You need 85 spins to get a less than 10% chance, and 110 spins for a less than 5% chance.
Here's some interesting backwards math for ya: there's a 2.7% chance of your number hitting. But you need 132 spins for a less than 2.7% chance of it hitting.
On a double zero wheel, these numbers are 87 spins, 113 spins and 137 spins for the 2.63% chance.
