What is best to run 21 + 3? Is it better to run this game with 6 deck only or would your odds be better with 8 decks cutting out 2?

I think it is better with more decks. From how I understand it, the more decks, the better it is for side bets but worse for actual blackjack.
But I have no maths to back it up.

This is an interesting question. Some of the payoffs favor less decks and others favor more. Specifically, the straight and straight flush are slightly more likely with less decks while the flush is slightly more likely with more decks. The three of a kind is quite a bit more likely with more decks, but it is a rare event no matter what and its payout is no better than any other winning hand.
I don't acutally know why they bother to include the straight flush, there is no bonus payout for it over a straight or flush.
Looking at the paytable now and making a guess, I think there would be very, very little difference between 6 and 8 decks with this game.
