I would call those "Old People Slots". LOL
The reason those won't be back is because the handle is generally to low on those. On the crazy video line slots people are paying about $2.25 a spin while the single line reel slot probably only averages $0.75.

There are lots of wolf-themed slots I dislike. You have to get rolling with multiple back-to-back wins to add wild symbols, but once you get rolling it gets crazy. The bonus round is fun as well.

Yes I think IGT Triple Diamond is a good example.

This is often my go-to if I have slot play. I like the Single Line Triple Stars.
I like simple slots with the old school feel (single line). I personally don't like extra features. I know bonus features are popular. But, I like to keep it simple. I do enjoy the Wheel of Fortune Slots occasionally (which I think are there are versions of Triple Diamonds and Triple Stars with the Wheel Feature). I think the wheel feature is fun when it hits on the third reel. But, honestly, I still think I prefer the base games alone than the Wheel of fortune versions. Though this is one feature that can be fun.

Not sure what you're seeing, but I'm seeing people crowding around $10 and $25 3 reel slots. Many of which are now pseudo-reels... video slots that look and sound like reel slots.

Seriously, though, I have to go along with the others in this thread in that I prefer the basic 3-physical-reel slots with the single payline (or sometimes, 3/5 paylines). Sorry I couldn't be much help.

Advantage Play aside, I think I would generally prefer any slot that offers an opportunity to win the spin (or break even) for as long as possible.
For that reason, I think a game such as Diamond Hunt is pretty well-designed and wish they would make that a must-hit. I think it's a legitimately fun game, but I've only ever played it once or twice for very small amounts because there was no advantage to be had.
The way it works is that the Free Games symbol can appear on any of the reels and you need three of them---that's not unusual. What's a little bit unique is that you collect diamonds on regular spins (and Free Games) and get paid based on the number of diamonds you get, starting with five diamonds. I believe five diamonds is breakeven, but don't specifically remember.
Anyway, full reel stacks of diamonds (which would be four) are frequent, so if you've even acquired one diamond, you're still technically in it until the last reel falls because it could be a full stack of diamonds.
There are some games out there where, if you don't have two symbols matching on 1&2 and don't have a Free Games symbol on two (some games even require Free Games symbols left to right starting from Reel 1) then the spin is already over. I don't generally play slots for fun, but the only game that has this dynamic that I still consider a fun game (that can occasionally be played at an advantage) is Big City 5's. There are no scatters, so if nothing matches on 1 & 2 and you don't have Free Games on both, that spin is over.
So, my short answer is no specific theme, but any slot that keeps the possibility of a win alive as long as possible. That does not include slots with a, "Mystery," feature that might trigger after a losing spin.
