Three card poker is 3.37% and element of risk is about 2%. The "pair plus" is more than 7.2%
Let it ride is 3.5%(not know the EOR).
Pai gow poker is about 1.4-2.5% I think (depends on how many time you bank).
Crazy 4 poker is 3.42% with 1.09 EOR
criss-cross is 4.33% with EOR of 1.48%
DW is unknown for me
UTH is 2.185% with EOR of 0.526%
Mississippi stud is 4.91% with EOR of 1.37%.
Texas holdem bonus is 2.04%.
Asia poker is 4.82%
Please note-low EOR(compared to the edge) means you will mostly bet more. 5$ may might be actually a 10$ or more game.
3 card poker, let it ride, Pai-gow and UTH seems to be most popular.
I personally prefer 3 card poker(low edge, moderate variance and 1-2 bets per hand), Pai-gow poker and UTH(but 5$ is too much for me). Never played Texas holdem bonus. I don't like Caribbean stud.

What usually happens in most of the carnival games is that the variance will kill you. Most players bring between $200-$500 for a $5 or $10 game, and you can blow right through that without winning more than a couple hands. I've gone through $500 at a $10 Let It Ride table without getting a single no-brainer, blown through $300 at a $5 Mississippi table without winning a single hand, even UTH you can only hold your own for so long when you are underfunded.
That's the thing. Carnival games attract low rollers, low rollers bring small bankrolls, low rollers wind up in the hotel room watching the late football game.
